Grilled Goat Cheese with Almonds and Culinary Argan Oil

This grilled goat cheese with almonds and culinary argan oil recipe makes one of my favorite salads with culinary argan oil. Even if you think you don’t like goat cheese give this a try, I am sure you’ll love it.

There are two types of goat cheese that you can use. One that has an outer skin, which when grilled, becomes translucent and melts. The other is whiter and creamier, and has no crust. This type of goat cheese, sometimes labeled “fromage chevre doux”, does not melt but rather grills nicely retaining a crumbly texture and good flavor. Both types of cheese will work in this recipe. Allow about 3 pieces per person.

Grilled Goat Cheese with Almonds and Culinary Argan Oil

Yield: 3 servings

Ingredients
  • 12 tsp. culinary argan oil
  • 2–3 Tbsp. (150ml–200ml) balsamic vinegar (optional)
  • 6 cherry tomatoes
  • 6–1½ in. x ¼ in. goat cheese round “slices”
  • 6 tsp. honey
  • lettuce and rocket salad
  • red onion, finely sliced
  • pine nuts (can substitute sliced almonds)
  • baguette (or any rustic bread) sliced into ½ in. thick rounds
Instructions
  1. Make a green salad with the lettuce, rocket salad leaves, finely sliced red onion and cherry tomatoes.
  2. Slice 6 rounds of baguette, about ½ in. thick.
  3. Lightly toast the bread on both sides. After toasting drizzle 1 tsp. argan oil on each slice. Then place one cheese “round” on each slice. Put the bread and cheese slices on a 375℉ (190℃) grill. Grill for about 5 to 10 minutes, until bread has lightly brown edges.
  4. Prepare the topping for the goat cheese toasts, Mix 6 tsp. argan oil with 6 tsp. honey. Add 6 tsp. pine nuts (or lightly toasted almonds). Mix this well and set aside.
  5. Make a dressing for the salad. You can use a light salad dressing or a rich balsamic reduction.
  6. Pour 2 Tbsp. of balsamic vinegar in a pan. Bring to a boil, lower heat and simmer until half of the original volume. The vinegar should turn into a rich sauce. To thicken and sweeten the sauce you can add a little brown sugar. To check the consistency of dressing, scoop some on a teaspoon and allow to cool, then spoon back into the pan. The dressing should be thick like honey, but not runny like vinegar. If you add too much sugar or over reduce, the dressing will seize up and you’ll need to start again.
  7. Once the cheese and bread toasts have been lightly grilled, remove from the oven. Drop 1 tsp. of the topping over each goat cheese toast and put back under the grill for approximately 5 minutes until the honey has caramelized slightly. Take care the honey does not burn.
  8. Finally, spoon the balsamic reduction dressing over the salad and serve with the goat cheese toasts.
